Rum and Ricotta Tiramisu
Ingredients:
1 cup Ricotta Cheese
¾ cup Cream Cheese
1 Tbs. Rum or Cognac
¼ cup Powdered Sugar
1½ cups very strong Organic Planet Winter Roast Coffee, cooled
16 Ladyfingers
2 Tbs. Unsweetened Cocoa, for dusting
1. In a mixer, beat the Ricotta and Cream cheeses, rum and sugar until light and creamy, set aside.
2. Pour the cooled coffee into a large shallow dish.
3. Take 8 Ladyfingers, and quickly dip one side of of them into the coffee then layer the bottom of a large flat-based serving dish or large cafe au latte mugs.
4. Spread half of the cheese mixture evenly over the ladyfingers.
5. Dust with half the cocoa then repeat layers with coffee-dipped biscuits and cheese.
6. Cover with plastic wrap and refrigerate for at least 6 hours or overnight.
7. Dust with remaining cocoa just before serving.
